Athena Donair uses only 100% pure beef (Alberta Beef) packed under the supervision of the Canadian Food Inspection Agency (CFIA) in its Edmonton, Alberta plant. You should endeavor to use only meat processed in a federally inspected plant.
PREPARING A DONAIR FROM COOKED DONAIR LOAF
Microwave
Using the tongs, lay 3-4 oz. of unfrozen sliced meat onto the fresh pita bread.
Wrap the pita bread snugly with a sandwich paper and heat the sandwich in the microwave oven for 30-45 second.
Remove from oven, unwrap and top with one large spoon (1 oz,) of sweet sauce. (over-across the top) add 2 wedges of tomatoes, a little shredded lettuce and diced or thinly sliced onions.
Rewrap the pita snugly in the same sandwich paper, insert in a bag and hand it to your customer.
Grilled
Using the tongs, lay 3-4 oz. of unfrozen sliced meat onto a hot grill.
Spray pita bread with cold water and place it on the grill. Hold down with spatula for a few seconds, remove the bread, then the meat, (Do not keep meat too long on the grill. It's already pre-cooked).
Lay your pita on a sandwich paper and top it with sauce and all the vegetables, as in step three above.
Rewrap the pita snugly in the same sandwich paper. Insert in a bag and hand it to your customer.
Steamed
Using the tongs, lay 3-4 oz, of unfrozen sliced meat and pita bread into steamer compartment. Heat and remove, follow steps 3 and 4 above.
Fresh off the broiler
Warm up the pita bread (using microwave, steamer or grill)
Using clean sanitized knife, Shave 3-4 oz of cooked meat off the broiler, place the meat on the pita bread, follow step 3 and 4 above.
BEEF CONES Cooking Instructions
Athena Beef Cones should be cooked on the rotisserie only in a frozen state, without prior thawing .It is necessary to cook the meat to 71 degree Celsius, for at least 15 seconds prior to serve the meat to your customers.
Meat must be cooked continuously, except when slicing.
Cooked sliced meat must be either:
(a) used immediately to prepare donair sandwiches, or
(b) stored in a hot holding unit at 60 degree Celsius or greater, or
(c) cooled quickly to at or below 4 degree Celsius for storage (reheating in a microwave is acceptable).
At the end of the day, unused portion of donair cone may be refrozen on the spit. This is done by covering the entire spit including the meat with clean, food grade wrap and placing it in the freezer. Any product left after the second day must be discarded, Not to be used for any food dish.
